Peanut Butter Cookies

I end up making these every year for the holidays, and I made the mistake of giving them to friends, family, and neighbors. They’re a huge hit. You’d think I laced them with cocaine and Mountain Dew or something; they’re so addictive and delicious. If you make these, and I think you should, I would suggest not telling anyone you have them. Don’t say I didn’t warn you!

Ingredients
  1. 1 cup - Unsalted Butter, softened
  2. 1 cup - Sugar
  3. 1 cup - Brown Sugar, packed
  4. 2 - Eggs
  5. 1 - Egg Yolk
  6. 2 tsp - Vanilla Extract
  7. 18 oz - Peanut Butter, creamy
  8. 2 cup - All Purpose Flour
  9. 1 tsp - Baking Soda
  10. ½ tsp - Salt
  11. 1 cup - Peanut Butter Chips, optional
Instructions
  1. Cream together butter and sugars until smooth. Add in the eggs, yolks and vanilla; mix until fluffy. Stir in peanut butter. Sift together the flour, baking soda and salt; gradually mix into the creamed mixture. Stir in the peanuts or peanut butter chips.
  2. Refrigerate dough for at least 2 hours.
  3. Preheat oven to 350°F and lightly grease cookie sheet.
  4. Roll dough into walnut sized balls. Place on the cookie sheet and flatten slightly with a fork. Bake for 12 to 15 minutes in the preheated oven. Allow to cool slightly on the cookie sheet before moving to a cooling rack.
Notes
  1. These cookies are great when slightly undercooked!
